Sun Dried Tomato Hummus

16 oz        Garbanzo Beans

4 – 5         Sun-dried Tomatoes

1                Garlic Clove

1            Zest & Juice from a lemon

Dash of Crushed Red Pepper (optional)

1 Tbsp.     Olive Oil

Put all ingredients (except olive oil) in a food processor or blender.  Puree.  Add olive oil slowly as needed until the ingredients reach a spreadable consistency.  Serve with carrots, celery, broccoli, cauliflower and peppers.
