Orance-Scented Beets
Ingredients:
8 cups (1-inch) cubed peeled beets (about 3 pounds)
11/2 Tbsp grated orange rind
11/2 Tbsp olive oil
½ tsp freshly ground black pepper
2 tsps balsamic vinegar
Directions:
Preheat oven to 375. Combine first 4 ingredients in a roasting pan; toss well to coat. Bake at 375 for 45 minutes or until tender, stirring occasionally Stir in vinegar. Yield: 6 cups.
