Meatless Burgers

Serves: 6

Total cooking time: 65 minutes

Ingredients:

1 cup dried green lentils, rinsed

6 cloves garlic, minced

¾ cup yellow onion, diced

2 celery stalks, minced

¼ cup leek, finely diced

2 tbsp. flaxseed, ground

5 tsp. Dijon mustard

3 tbsp. Unsalted tomato paste

1 tsp. Chile powder

1 tsp. Turmeric

2 tsp. Cumin

1 cup cooked long grain brown rice

2 tbsp. Extra virgin olive oil

Instructions:

Preheat oven to 375. Line a baking sheet with parchment paper. Cook lentils as told on package directions. Next, in a large bowl mix garlic, onion, celery, leeks, flaxseed, Dijon mustard, tomato paste and spices.

Once lentils are finished cooking mash, leaving some whole, then mix with rice into the large bowl as well. Next heat oil in a frying pan and begin to make the lentil rice mixture into 6 lentil patties.

Next add them to the pan and cook for 2-3 minutes for each side. Transfer patties to prepared baking sheet and cook in oven for 15 minutes until warm through.
