Carrot and Cilantro Salad

 

Ingredients:

          8 Medium carrots peeled and cut into 1 ½ x ¼ x ¼ Sticks

          4 Tbsp Finely Chopped cilantro

          4 Tsp. fresh lemon Juice

          4 tsp. Olive Oil

          1/2 tsp. Cayenne pepper

          1 tsp. paprika


Directions:

In a large pot fill with water and bring to a boil. Next drop carrots into boiling water and boil for 10 seconds. Drain immediately and transfer carrots to bowl, add remaining ingredients and mix well. Serve at room temperature or chilled.
