Black Bean Cakes

Ingredients:

2 Tbs. Olive Oil

4 Scallions Chopped

6 Garlic Cloves Chopped

2 jalapenos chopped

1 Tbs. ground Cumin

2 cans Black Beans (drained and rinsed well)

Sea Salt

Pepper

1 Large Sweet Potato, peeled and grated

1 Large Egg lightly beaten

 

Heat broiler.  In a small skillet over medium heat, warm 1 tablespoon of the oil.  Cook the scallions until softened, add the garlic, jalapenos and cumin.  Cook until fragrant, then transfer to a large bowl.Add the beans to the bowl. Mash with a potato masher or fork.  Season with salt and pepper.  Mix in the grated sweet potato and egg.  Divide into 6 – 8 balls of equal size and flatten into patties.Brush a baking sheet with the remaining tablespoon of oil.  Place the patties on the sheet.  Broil 4 inches from the heat until golden brown, approximately 8 – 10 minutes.  Flip the patties and broil for 2 –3 more minutes.  Serve with lime yogurt.

 

Lime Yogurt

Ingredients:

 ½ cup Plain Low Fat Yogurt

2 teaspoons fresh lime juice

1 small jalapeno minced

 

Combine all ingredients in a small bowl and mix.  Serve on top of the patties.
